Quick and Easy Banana Cake...


Picture this; it's a rainy or chilly Saturday afternoon and you're watching your favourite film with a cup of tea but something is missing....welcome the Banana Cake. This is my tweaked version of the Banana Loaf and it's the perfect way to get rid of overripe bananas.
You will need;
-Baking Parchment
-Round Cake Tin
-140g Butter - remember to get this out of the fridge a bit before you start so it softens
-140g Caster Sugar
-2 Beaten Eggs
-140g Self-Raising Flour
-1 Teaspoon Baking Powder
-2 Overripe Bananas

1. Firstly preheat your oven to 180°C/ Fan 160/ Gas Mark 4
2. Line the bottom of your round cake tin with parchment paper. Then butter the paper and the sides of the tin

3. Mix the butter and the sugar in a bowl with a hand mixer, until light and fluffy. I like to cover my bowl with a tea towel so the mixture doesn't fly out and cover your kitchen

4. Add the eggs slowly to the mixture with a small amount of the flour (this helps the mixture not to curdle). Keep mixing with your hand mixer until all the egg has been mix in

5. Peel and mash your bananas in a separate bowl

6. Fold in the remaining flour, baking powder and the mashed banana. Folding helps to trap air in the mixture to make your cake lighter

 7. Mix for about 30 seconds with the hand mixer to make sure it is all mixed together

8. Pour the mixture into your cake tin and cook for 40 mins

9. After 40 minutes, check the centre of your cake with a skewer - once the skewer comes out completely clean remove from the oven or continue to bake but keep checking so it doesn't burn
10. Cool your Banana Cake on a wire rack
11. Before serving, decorate the top with dried banana chips. 

Something really worth noting is that you can freeze this cake and defrost as and when you need it!
